I am retired after many years of programming various types of embedded real-time systems (avionics, medical, environmental monitoring, consumer electronics, etc).

My current interest is running Lua on microcontrollers. Assuming that the mcu on your board has enough flash and ram, I can provide a framework for your board which enables it to be programmed in Lua. Given this framework, you can then develop the application yourself or I can develop some or all of it for you.

Besides embedded Lua, I can also do plain old C on many popular microcontrollers - either bare metal or with an RTOS (such as RIOT OS).
