My “Swedish” buns are based on a Paris, France bakery recipe that I came across. Swedes appear to prefer a more forward cardamom profile and probably not quite as sweet as mine, which is due, in part, to the brown sugar glaze.
Kanelbulle
From Sweden, the kanelbulle, or cinnamon bun, has found a home in viennoiserie. This pastry uses a dough similar to brioche. It’s rolled out and spread with a cinnamon-sugar filling. The dough is then rolled into a log, sliced into rounds, and twisted or shaped. To preserve moisture and enhanced flavor, brown sugar glaze is applied immediately after baking.
Just prior to serving; microwave 10-15 seconds awakens the aroma, texture and taste of freshly baked, they are that good!
