Sugar maple is thought of as the "gentleman" of smoking woods: it's sweet, subtle, and enhances food without overpowering them. Its primary flavor is mildly sweet with hints of caramel and vanilla. It's smoke intensity is light to medium, being less intense than hickory but slightly more pronounced than fruitwoods like apple or cherry. It also gives a wonderful golden-brown color and is popular to smoke pork, chicken, turkey, duck, lamb, fish, game meats, sausages, bacon, vegetables, and cheeses.
These cut, debarked, gorgeous sugar maple wood chunks are priced at only $2.00 per pound. Look high and low but you will not find a better deal. These chunks came from a healthy, humongous sugar maple tree that a homeowner took down because it overpowered the small yard and adjacent yards, and the neighbors complained. The homeowner did not use pesticides, herbicides, or any chemicals in the lawn or on the tree. The tree was located in a quiet, dead-end cul-de-sac away from major roads or road pollution.
I cut these to size and removed all bark. I donated bags of inferior/ugly shapes to eager donees and kept the best pieces to season them for my own meat smoking. No bore holes exist that would indicate pests. No actual bugs or borers exist as I have been carefully monitoring once to twice each week the chunks that are kept well above ground in my clean, dry, bug-free garage with good airflow. I have been seasoning these chunks since August, 2025. They will be ready by spring, 2026. I overbought, so my loss is your gain! Buy as little or as much as you need up to about 75 pounds. I'm keeping some, so don't take all of it! Photos show about 1/4 of how much I have.
